Mexican Pizza (Taco Bell Copycat Recipe)

I recently created a version of Taco Bell Mexican Pizza that truly captivated my senses. I recently tried my hand at creating a Mexican Pizza that totally reminds me of those epic Taco Bell copycat versions we all crave. I’ve always been fascinated by that perfect balance of crunchy and melty textures.

In my version, I start with two 8in flour tortillas that I toast until just crisp before spreading on a generous 1/2 cup of refried beans. Then I mix 1/2 lb ground beef with a finely chopped 1/2 small onion, a minced garlic clove, and a packet taco seasoning mix, cooking it all until it’s perfectly done.

I drizzle 1/3 cup tomato salsa over the mix and sprinkle 1 cup shredded cheddar cheese over it. To finish it off, I top it with 1/2 cup diced tomatoes, 1/4 cup sliced black olives, and 1/4 cup chopped green onions.

Ingredient Quantities

  • 2 8in flour tortillas
  • 1/2 cup refried beans
  • 1/2 lb ground beef
  • 1/2 small onion, finely chopped

  • 1 packet taco seasoning mix

How to Make this

1. Preheat your oven to 400°F.

2. In a skillet over medium heat, cook the ground beef with the chopped onion and minced garlic till the beef is browned. Then stir in the taco seasoning mix so it fully coats the meat.

3. Spread the refried beans evenly on both 8-inch flour tortillas.

4. On one tortilla, add the cooked beef mixture right on top of the beans.

5. Drizzle the tomato salsa over the beef, making sure it all gets a nice, even coverage.

6. Sprinkle the shredded cheddar cheese all over the salsa on that tortilla.

7. Scatter the diced tomatoes, sliced black olives, and chopped green onions on top of the cheese.

8. Carefully place the other tortilla on top to form a layered pizza.

9. Put the assembled pizza in the preheated oven for about 10 minutes or until the cheese is melted and bubbly.

10. Remove the pizza from the oven, let it cool for a minute or two, cut it into slices, and enjoy!

  • Instead of refried beans, you can mash some black beans with a bit of salt and lime juice
  • If you dont have ground beef, ground turkey or even finely chopped mushrooms work real well
  • Use a mix of chili powder, cumin, garlic powder and salt as a substitute for taco seasoning
  • You can swap tomato salsa with a fresh pico de gallo if you’d like a lighter flavor
  • If cheddar cheese isn’t around, try Mexican blend cheese to keep that creamy texture

Pro Tips

1. Try warming the tortillas in a dry skillet for like 1 or 2 minutes before you spread the beans on them. It helps keep them from getting all soggy once you add all the wet ingredients.

2. When you’re cooking the beef with the onions and garlic, let it cook strong enough so the onions get a little caramelized. That little extra step brings out a richer flavor in the meat.

3. Drain some of the fat from the pan after the beef is done browning. It’ll make sure your dish doesn’t turn out too greasy and helps the flavors shine through.

4. If you’re feeling adventurous, add a pinch of cumin or stir in some chopped cilantro to the beef mix. It’ll give your pizza an extra kick that elevates the overall taste.
